Adelle is a soft-ripened bloomy-rind cheese. With a light, fluffy texture and a flavor of butter and citrus, this creamy, smooth cheese melts in the mouth.

Adelle is made with pasteurized cows’ milk, sheep’s milk, cultures, enzymes, and salt.

Adelle is available in a Six Piece Case and the Premiere Collection, and is also in both the Small Mixed and Medium Mixed Boxes, which can be found in the cheese shop.

This cheese is the namesake of our first ewe, Val, who was much beloved. Valentine tastes sweet, buttery and herbaceous with an elegant, rich finish.

Valentine is made with pasteurized sheep’s milk, cultures, enzymes, and salt.

Valentine is available in a Six Piece Box, and is part of the Medium Mixed Box and the Premier Collection, which can be found in the cheese shop.

A favorite of raw milk cheese lovers, this blend of cow and sheep’s milk is earthy, savory, and luscious, with a bright, citrusy finish. Protein crystals form over months of aging giving this cheese added texture.

Hannah is made with raw cows’ milk, sheep’s milk, cultures, enzymes, and salt and is aged for about six months.

Hannah is available in both half and full wheels, and is also part of the Small Box, Medium Box, and Premiere Collections. All of these can be found in the cheese shop.

Isabella

washed rind raw cow & sheep’s milk

Isabella is a unique washed rind cheese named for the young granddaughter of one of the owners. Isabella’s taste has been compared with Belgian ales, because of its sweet briny flavors and yeast notes. A light bloomy rind reveals a thick and creamy interior.

Isabella is made with raw cows’ milk, sheep’s milk, cultures, enzymes, and salt and is aged at least 60 days.

Isabella is available in a four pack case, and is also part of the small and medium boxes. These can be found in the cheese shop.

Willow Creek, Ancient Heritage Dairy, American Cheese Society

Willow Creek

washed rind raw cow & sheep’s milk

Willow Creek’s rind is shows a beautiful array of dark-fruit and earthy colors. Washed in red wine, the wine imparts earthy flavors of wild mushrooms, with a fruity edge and a lightly fermented finish. Every wheel comes stamped with a Merlot grape-leaf covering the surface.

Willow Creek is made with raw cows’ milk, sheep’s milk, cultures, enzymes, and salt and is aged about 90 days.
